When Monroe Association for ReMARCable Citizens (MARC) became a certified Green Business, one of the steps adopted by the agency was the composting of food waste. Food waste from the Rainbow Cafe, where lunch is served daily, is easily composted at the neighboring Key West Community Garden. The Rainbow Cafe, a training center for MARC clients to learn the various aspects of the food service industry, creates a good amount of organic waste which in time becomes a rich soil amendment for use in the garden.
